Tikka Masala Butternut Squash Soup

Ingredients

  • @masalagossipofficial tikka masala curry sauce
  • 1 bag frozen butternut squash
  • ½ yellow onion
  • 1 can fire roasted diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 can coconut milk or 1/4 cup heavy cream
  • 2 cups of fresh spinach
  • Olive oil
  • Salt and Pepper to taste

Method

  1. Saute sliced onions in a pan on medium high heat with olive olive. Season with salt and pepper.
  2. Once they are translucent add in @masalagossipofficial tikka masala curry sauce.
  3. Saute for a few mins, then add in fire roasted tomatoes and frozen butternut squash.
  4. Stir then cook covered for 10 mins.
  5. Add in chicken broth and coconut milk, stirring until well combined.
  6. Cook covered for another 5-10 mins. Now is the time to taste and add in additional salt and pepper as needed.
  7. Then add in spinach and stir until wilted. Serve hot and enjoy!
