Ingredients
- @masalagossipofficial tikka masala curry sauce
- 1 bag frozen butternut squash
- ½ yellow onion
- 1 can fire roasted diced tomatoes
- 1 cup chicken or vegetable broth
- 1 can coconut milk or 1/4 cup heavy cream
- 2 cups of fresh spinach
- Olive oil
- Salt and Pepper to taste
Method
- Saute sliced onions in a pan on medium high heat with olive olive. Season with salt and pepper.
- Once they are translucent add in @masalagossipofficial tikka masala curry sauce.
- Saute for a few mins, then add in fire roasted tomatoes and frozen butternut squash.
- Stir then cook covered for 10 mins.
- Add in chicken broth and coconut milk, stirring until well combined.
- Cook covered for another 5-10 mins. Now is the time to taste and add in additional salt and pepper as needed.
- Then add in spinach and stir until wilted. Serve hot and enjoy!
